Purees are frequently carefully pasteurised in order to minimize the juice’s microbial load whilst preserving its nutritional value.
Aseptic purees are produced using the aseptic processing technique in which the perishable food items like fruits and vegetables (in a liquid form) are made shelf-stable meaning that they do not need refrigeration.
